Yellow tea, or huangcha, , is light fermented tea (20% fermentation). Yellowtea is similar to the white and green teas, but is withered many hours inprocessing (men huang, ) so it gets a very velvety taste and delicate flavor.

Jiun Shan Yin Zhen, SilverNeedles from Sovereign's Mountain, 君山 银针 is the most famousyellow tea. Until quite recently, it was produced only in its historicalhomeland in Dongtinghu Lake, 洞庭湖, Hunanprovince. For ages the fishermen and the hermits lived here, who among otherthings had grown tea. Actually, there are no mountains here, the picturesquegreen hills rise above the vast plain water only for a few tens of meters. Theentire island can be walked around for an hour, its area is ​​0.37 squarekilometers. Tea plantation area is even less. It is a bit strange, quiet,secluded and very beautiful place. The tea of this place has an amazing,mysterious charm.

But Hunan tea is not the only one in the yellowtea category. You can buy in our shop an excellent Yellow Buds from the Hoshan Mountains,Anhui Province,the famous Yellow Buds from Mengding Mountain, Sichuan province and yellow tea from Zhejiang,Hubei and Guangdong.

The best yellow tea ismade only a few days a year from late March till early April. The buds areplucked early in the morning on a clear day. The buds plucked a bit later willbe a raw material for the first and second grade tea. About 25 thousand budsare used to produce one kilogram of tea. All the buds should be one to one taut,with juicy, light green body, covered with white hairs. The production processtraditionally takes three days and three nights, 72 hours (and sometimes more).During this time 8 special stages are made: partial fixation of green, fēn shāqīng , cooling, Tān liáng, , primary drying, Chū hōng, ,primary withering, Chū bāo, , re-drying, Fù hōng, , cooling, Tān liáng, ,  re-withering, Fù bāo, , and final roasting, Zú huǒ, .

The authentic Chineseyellow tea is rich in vitamins, antioxidants and caffeine. It has beneficialeffects on the cardiovascular system, cleanses the blood and improves theimmune system. It stimulates the production of gastric juice, as other lightlyfermented teas, so it is not recommended to drink on an empty stomach, it isbetter to have this type of tea after eating (an hour or two). It relievesfatigue and stress, refreshes perception, nurtures emotions and tastefulness.
