«Shunxi Bai Hao Yin Zhen» («Silver Needles with white fur from Shunxi») is the white tea from Fujian province, made in early spring of 2019.
In appearance: large, silvery-green, pointed, fluffy buds. The fragrance is intensive, herbaceous with a nutty accent. The liquor is transparent, with a light shade of white grapes.
The bouquet of the ready-made tea is fresh, herbaceous with hints of flaxseed, raspberry leaf, green apples, mint, and baked chestnuts. The fragrance is tender, spicy and floral. The taste is refined and full-bodied, silky, with a fine berry sourness, minty coolness, spicy nuances, and lingering finish.
Brew tea with hot water (75-80°С) in a porcelain gaiwan or in a teapot of porous clay. The proportion is 4-5 g per 100 ml. The time of the first steeping is about 10 seconds. After that do short steeps (just for 2-3 seconds), increasing steeping time for each subsequent step, if necessary. You can repeat steeping up to 10 times.
«Shunxi Bai Hao Yin Zhen» is a fine choice for ceremonial tea party: refined and gentle, long and multifaceted.
