Chinese red tea is a strong fermented tea (70-90% oxidation). It is known as “black tea” outside of China. The fact is that tea started to be sold in Europe in the XVII century and at that time all types of tea were divided into two categories of green and black according to the liquor color. The Chinese tea culture is much older than European tea business and tea is categorized into more types. Production of red tea has started quite recently, according to Chinese tea history. It has been made since XV-XVI centuries in the WuyiMountains. The production technology was spread to the neighboring provinces - Anhui, Hubei, Jiangxi, Hunan, Guangdong, Zhejiang, Jiangsu and Yunnan.
Red tea is divided into three categories depending on the differences of raw materials and production technology nuances. These are “Xiao Zhong”, “Gongfuhong” and “Hongsuicha” types. Each of these categories includes hundreds of varieties that present a wide range of tastes and aromas. The technological process of all tea types includes four stages. The first is Wei Diao (萎凋), withering, Rou Nian (揉捻), rolling, Fa Jiao (发酵), fermentation, Gan Zao (干燥), drying. Slightly withered tea leaves are rolled, then they are left to oxidize for several hours and then slowly heated. The general rule is that the slower the process of heating and more moderate the temperature during fermentation and drying are, the better red tea will be.
Chinese red tea tones up, activates blood circulation, lowers cholesterol, breaks down fats and refreshes breath. The high content of tannin promotes the healing of the gastrointestinal tract damaged mucous membranes. Also, red tea is a natural antidepressant that relieves irritability and psychosomatic stress, giving a feeling of inner peace. The Chinese say that it "raises the heat in the heart," that warms the body and gives a feeling of warmth in a heart. Especially the Chinese red tea is beneficial for "cold" type of people (susceptible to cold, with rapid fatigue and sleepiness). And for all the rest it is the best choice in the cold season!
