«Xi Ye» is the red tea from Fujian Province.
In appearance: thin, brown flagella of twisted tips. The fragrance is gentle, woody with fruity accent. The liquor is transparent with meadow honey hue.
The bouquet of brewed tea is graceful and warm, woody, with fruity, honey and citrus notes. The fragrance is warm and gentle, with honey accent. The taste is refined and silky, sweetish, with delicate citrus sourness and lingering finish.
Brew tea with hot water (95°C) in a porcelain gaiwan or a teapot of porous clay. The proportion is 4-5 g per 100 ml. The time of the first steeping is about 5-7 seconds. After that do short steeps (just for 1-2 seconds), increasing steeping time for each subsequent step, if necessary. You can steep the tea up to 8 times.
