The quince (Cydōnia) is a tree in the Rosaceae family. Soft, young leaves were collected in May 2017 in Georgia and dried at low temperatures. Brewed leaves are used in folk medicine as a general health improving, antibacterial and diuretic remedy.
Dry leaves can be brewed with hot water (80-95°C). The proportion is 2-3 g per 100 ml. The first brew should last for 10-12 seconds. After that make short brews (just for 2-3 seconds), increasing the brewing time gradually. You can repeat this brewing method up to 7-8 times.
When brewing the leaves give a transparent infusion of golden almond hue, with fruity-floral aroma and delicious, delicate, sweetish taste with soft acidity.
