Alpine oolong "Old Tree Shuixian" was made in a small tea farm in the Wudong peak area in November 2017 (moderated fermentation, medium heat). Shuixian is an old name for authentic tea plants, which grow wild in the mountains of Fenghuangshan.
In appearance: thin, lengthwise twisted leaves of dark brown colors. The aroma is rich, spicy-floral. Infusion is transparent, with mahogany hue.
The bouquet of brewed tea is bright, multifaceted, fruity-floral, with notes of currant, juniper, citrus and spices. The fragrance is warm and deep, fruity. The taste is rich and full-bodied, silky, sweetish, pleasantly tart, with delicate berry sourness, hints of spice and lingering finish.
Brew tea with hot water (95°C) in a porcelain gaiwan or a teapot of porous clay. The proportion is 4 g per 100 ml. The time of the first steeping is about 10 seconds. After that do short steeps (just for 2-3 seconds), increasing steeping time for each subsequent step, if necessary. You can steep the tea up to 12 times.
