«Gaba Oolong» is made of Ruby-18 tea cultivar autumn shoots, collected and processed in Alishan nature reserve (Chiayi County).
When dry, these are heavy, glossy, burgundy-brown bundles with tiny cuttings. The fragrance is intense, warm, biscuit-spicy wit a tint of chicory. The infusion is transparent, dark amber hue.
The brewed tea has warm, complex flavor, with notes of wood, spices, cream caramel and berries. The aroma is tender, sweet. The taste is soft, silky, sweetish, with light berry tartness, transforming into mild, refreshing aftertaste.
Brewing suggestions. Brew tea with hot boiling water (95°C) in a gaiwan or a teapot for Taiwanese oolong made of porous clay. The proportion is 6 g per 100 ml. The first infusion should last for 8-10 seconds. After that make short infusions (just for a second), increasing the infusion time gradually. You can repeat this brewing method up to 10 times.
