Description

“Bai Ji Guan” means “White Cock Crest”. This is one of the most rare and unique tea varieties in the Wuyishan history. It is known as a gourmet tea in China since the Ming dynasty along with Da Hong Pao, Shui Jing Gui and Te Lo Han varieties. The tea bush “Bai Ji Guan” looks different from other types. The spring leaves are very light green and grow close to each other. The leaves are curved, pointed up and really reminds cock crests. The tea legend tells that white cock fight with the eagle and turned into the magic tea bush. The tea made from this tea bush is a remedy for many diseases. 

“White Cock Crest” is a genuine cliff tea. It grows in the Wuyishan natural reserve only in a few places. Only few professional tea producers can make tea from this variety, because this is s difficult process and rare expensive raw material can be easily spoilt. The technology process includes classical long-lasting heating on the wood charcoals, mild fire and medium fermentation.  

The dry tea consists of large curved brown, vinous, green and beige leaves. The floral, spicy aroma is rich and complex. The clear liquor has an olive yellow tint.

The bouquet of brewed tea is original, round, playful. Many nuances are changing during the tea time. There are floral, corny, nutty, spicy, fruity and woody tones. The aroma is rich. The taste is mild, oily, sweetish with tender woody astringency and slight fruity sour nuance. The aftertaste is rich and long lasting.

Tang Bei Bai Ji Guan is brewed with 95°С water in the gaiwan or yixing teapot for fermented oolongs. Take 6 grams per 100 ml volume vessel. Make quick infusions (2-3 seconds) and increase the infusion time gradually. It can be brewed 8-9 times.

This is an excellent ceremonial oolong for solemn occasion or special tea mood. It requires some tea tasting experience to estimate entirely the play of taste and the deep effect. This tea will take you to the amazing tea trip for 2-3 hours.

Чай для даоса. Меняющийся, но при этом не проявляет себя сразу. По вкусу и аромату ближе к гуандунцам, чем привычным уишаньским улунам, когда огонь сразу заявляет о себе. Обволакивающее чуть сладкое послевкусие, переходящее в свежесть, перемежающуюся вместе с той самой ноткой копчения. Испитой лист серо-зелёный с отчётливой бурой каймой ферментации. Мастер постарался и у него получилось, что ещё скажешь - не ищите путь, он сам вас найдёт...

"Утесная мелодия" - часто слышал это определение применительно ко вкусу уишаньского улуна.
В моем случае чаще всего в уишаньцах нравился аромат, но не хватало вкуса, поэтому пытался найти тот самый ДХП, вкусовые качества которого соответствовали бы по силе его аромату - надо признаться, среди ДХП пока не нашёл..
Тан Бэй Бай Цзи Гуань (следует отметить, что данный комментарий в равной степени справедлив и по отношению к Бай Цзи Гуань Янь Лун, несмотря на его более низкую цену) стал открытием - здесь не только подрумянившаяся булка, но и более тонкие материи: нотки гуандунских и даже зелёных чаёв (цветочность, сладость, тыквенные семечки), но при этом остаётся характерный, четко выраженный вкус уишанского улуна. Вероятно мастерство технолога трансформировалось во внутреннее тепло.
Для меня поиски мифического ДХП на этом приостановлены - утесная мелодия "зазвучала"..

Тан Бэй - финальное прокаливание чая на углях.
Тан Бэй Бай Цзи Гуань и Бай Цзи Гуань Янь Лун - это в итоге два разных чая от разных мастеров с разным видением одно и того же чая. Соответственно и вкус, и аромат, и чайное настроение у этих чаев тоже разные.
