This is an excellent, medium oxidized oolong. It was harvested and produced in 2015 near the Xiping village, the place of the oldest tea plantations. The raw material is the first spring tips. The official history of the local tea dates back to 1736 when it was included in the imperial register list. "Tie Guanyin Mao Cha" is a ready-to-drink tea, just it was not processed with the final stage, when the tea is sized and stems are manually cut. Despite the fact that the standard of premium "Tie Guanyin" means the tea flush, rolled into a tight knot without a stem, many tea enthusiasts prefer tea leaves with stems. They make a taste more round and thick, with a slight touch of woody astringency.
The dried tea consists of medium size spherical nodules that are tightly rolled, glossy, have beautiful green tones of forest ferns, olive, pistachio, yellowish and emerald. The aroma is delicate, herbal, floral, slightly spicy. The clear liquor is golden-green, while tea time infusion is getting yellow tint.
The bouquet of brewed tea is bright, round, woody, floral with notes of lilac, peach and vanilla. The taste is mild, buttery, slightly sweet, with a subtle citrus acidity, it gradually releases richness and depth. The aroma is flowing, caressing smell and blowing to the transcendental paradise garden, filled with scents of unseen flowers. The excellent aftertaste is long lasting and juicy.
Tie Guanyin is brewed with boiled water of 95 ° C in the yixing teapot for light oxidized oolongs or in the porcelain gaiwan. You can smell the lid of gaiwan during the brewing and enjoy the amazing flavor of essential oils. Take 6-7 grams of tea leaves per 100 ml vessel. Make quick infusions (just a few seconds) and increase the infusion time gradually. It goes 10+ infusions.
This is an excellent variety of Tie Guanyin, "the Iron Bodhisattva". It is bright, deep, mild and long lasting. It is equally perfect for the solemn occasion, for the company of friends, and for meditative relaxation.
