Oolong "Gaofa" ("Success"), baked on charcoal during processing, moderate fire. "San fen huo" literally means "three parts of fire" - this is how tea technologists often call moderate heating (the full phrase sounds like "three parts of fire to seven parts of tea", and in the case of strong baking - "three parts of tea to seven parts of fire" , thus the taste of the finished product is determined through this ratio).
