Yellow tea, or huang cha, 黄 茶, is light fermented tea (20% fermentation). Yellow tea is similar to the white and green teas, but is withered many hours in processing (men huang, 闷 黄) so it gets a very velvety taste and delicate flavor.

The best yellow tea is made only a few days a year from late March till early April. The buds are plucked early in the morning on a clear day. The buds plucked a bit later will be a raw material for the first and second grade tea. About 25 thousand buds are used to produce one kilogram of tea. All the buds should be one to one taut, with juicy, light green body, covered with white hairs. The production process traditionally takes three days and three nights, 72 hours (and sometimes more). During this time 8 special stages are made: partial fixation of green, fēn shā qīng 分 杀青, cooling, Tān liáng, 摊 凉, primary drying, Chū hōng, 初 烘, primary withering, Chū bāo, 初 包, re-drying, Fù hōng, 复 烘, cooling, Tān liáng, 摊 凉, re-withering, Fù bāo, 复 包, and final roasting, Zú huǒ, 足 火.
The authentic Chinese yellow tea is rich in vitamins, antioxidants and caffeine. It has beneficial effects on the cardiovascular system, cleanses the blood and improves the immune system. It stimulates the production of gastric juice, as other lightly fermented teas, so it is not recommended to drink on an empty stomach, it is better to have this type of tea after eating (an hour or two).
