«Iron Cake», Te Bing is produced by Xiaguan Factory. It is situated on the North-West of Yunnan province (Dali district). This tea cake, cha bing, was produced by CNNP company special order which is known for its high standard quality “Red Stamp” puers. The known sign placed on the puer package is red hieroglyph “Tea” which surrounded by eight hieroglyphs “zhong”, “center”. Xiguan region is one of the starting points of the ancient tea-horse road from Yunnan to Tibet. It is called Yunnan Switzerland due to beautiful mountain landscapes and special climate. The Indian ocean monsoon goes up along Xierjiang and meet cold air steams which go down from Zangshan Mountain.
Xiaguan raw puers are high estimated by tea collectors and they are known as Te Bings or “Iron Cakes”. This cha bing was stored in the Taiwanese collector storage.
The dry cha bing, tea cake (390 gr), is fine compressed and easily crushed with fingers. The raw material is homogeneous and consists of dark green-brown twisted leaves and buds covered with silver-beige hair. The aroma is delicate, mellow with camphor and prunes tones. The clear liquor has chestnut-rose tint.
The bucket of brewed tea is mellow, with woody and fruity tones. The taste is complex and strong, it releases gradually. First infusions have sweet, smoky tones of prunes and dried apricot, infusions in the middle of the tea time have rich berry sour taste and at the end taste turns to wet mushroom and woody tones. The aroma is subtle, mellow with fruity and camphor tones. The aftertaste is pure and refreshing.
Te Bing is brewed with 95-100°С water in yixing teapot for raw puers or in gaiwan. Take 5gr for 100ml volume vessel. Make first infusion for 8-10 seconds, and brew each next infusion a bit longer. Brew this way 12 times.
That is gorgeous aged raw puer, which was born in the millennium. It is the source of sensitive and intellectual enjoyment with excellent delicate taste and strong energetic effect.
