Ziziphus jujube (Zízíphus jujúba), commonly called jujube, red date, Chinese date - is a species of Ziziphus in the buckthorn family (Rhamnaceae). It is a small deciduous tree or shrub reaching a height of 5–12 metres. The plant is cultivated in ancient times and now is growing in the countries of South and East Asia, the Mediterranean, Japan and Australia. It is considered a valuable medicinal and food plant: its fruits have a soothing, hypotensive, tonic and diuretic effect.
Fruits can be eaten dry or brewed.
Brewing suggestions. 10 g of dried fruits put in a thermos, pour boiling water (200-350 ml), close the lid and let it brew. After 15-20 minutes you will get a clear broth of honey hue, with a warm, fruity aroma and sweet taste with a slight sourness and a thin mushroom note. Delicate rings of softened fruit are also quite tasty.
