This is flat green tea from Hangzhou, Zhejiang province. The name of the tea is the same as the name of the village in this area and it means “The Dragon Well”. There is the same name well in this village. According to the legend you can see the dragon movements in it. Actually, it happens due to highly mineralized water and special optical effect in the well. “The Dragon Well” is considered to be miraculous and people use to come here to pray for the rain.
The raw material for this tea consists only of fleshes with two leaves. The raw material is roasted in a special wok that stops the fermentation process. Leaves are pressed to the heated wok surface by palms so they became flat and dry.
The high quality Long Jing tea has yellow-green infusion color, rich orchid flavor, and fresh, deep taste. According to the tea tradition Long Jing has four perfections: perfect shape of bright turquoise-green leaves, clear golden brew, rich aroma and fresh taste.
The Chinese medicine states that Xi Hu Long Jing is good for the lungs. Like other green teas, it has maximum healing properties. It contains vitamins and minerals that strengthen the walls of blood vessels, normalizes digestion, neutralizing free radicals.
Green tea is brewed with water which is boiled at the first stage, when the water surface is just starting boiling.
