Yunnan Da Bai is made of spring tea shoots (harvest 2017) in Jinggu Mountains (Puer County). «Yunnan Da Bai» means «Yunnan Big White», this is a tea variety with very light color of leaves.
In the dry form: large, silver-beige, fleecy buds and large, curved flagella of brown leaves with long thin cuttings. The aroma is smoked-woody. The infusion is transparent, wheat color.
The brewed tea has woody bouquet with fruity and spicy hints. The aroma is calm, fruity-spicy. The taste is juicy, sliding, minty, slightly astringent, with spicy nuances and refreshing aftertaste.
Brew tea with hot water (80-95°С) in a porcelain gaiwan or in a teapot of porous clay. The proportion is 4-5 g per 100 ml. The time of the first steeping is about 6-8 seconds. After that do short steeps (just for 2-3 seconds), increasing steeping time for each subsequent step, if necessary. You can repeat this method up to 9 times.
