"Song Zhong" is a famous variety bred at the end of the twentieth century from a 700-year-old tea tree by cloning (Chaozhou county, Guangdong province).
In appearance: slim, medium-sized, burgundy-brown flagella of twisted tea tips. The fragrance is deep, spicy-floral. The liquor is transparent, with a honey shade.
The bouquet of ready-made tea is bright, spicy-floral, with berry, woody and citrus notes. The aroma is high and sweet, spicy-floral. The taste is refined and silky, multifaceted, sweetish, with a delicate tartness, fine fruity sourness, spicy nuances and lingering finish.
Brew tea with hot water (95°С) in a porcelain gaiwan or in a teapot of porous clay. The proportion is 4-5 g per 100 ml. The time of the first steeping is about 6-8 seconds. After that do short steeps (just for 2-3 seconds), increasing steeping time for each subsequent step, if necessary. You can repeat this method up to 12 times.
