«Emerald» is one of well-known tea cultivars, breed in Taiwan Tea Research and Extension Station in 1981 under the internal name TTES#13. «Emerald from Taidong» is made of late autumn tea shoots (harvest 2016) in the East of Taiwan (Taidong area). During the processing it was exposed to deep fermentation and baked at medium heat.
Dry leaf: small flagella of twisted leaves, burgundy-brown color. The aroma is intense, biscuit-honey. The liquor is transparent, hazelnut color.
The brewed tea has bright, warm, biscuit-honey flavor with notes of dried fruits, berries and spices. The aroma is warm, honey-floral. The taste is soft, smooth, sweet, with tender berry acidity, transforming into juicy, refreshing aftertaste.
Brewing suggestions. Brew tea with hot boiling water (95°C) in a gaiwan or a teapot for Taiwanese oolong made of porous clay. The proportion is 5 g per 100 ml. The first infusion should last for 8-10 seconds. After that make short infusions (just for a second), increasing the infusion time gradually. You can repeat this brewing method up to 9-10 times.
