«Dong Ding» is one of the oldest varieties of Taiwanese oolongs. According to the legend at the fifth year is Qing dynasty, under the motto «Universal Abundance» (1855) a man from Lugu Lin Fengchi succeeded to pass official examination in Fujian and came back home with 36 Wuyishan tea-plants, which he started to grow at Dong Ding (Frosty Peak) area (Lugu County). Fertile soil, mild climate and proper care have positively affected the adaptation of immigrants. Soon the oolong from Dong Ding gave rise to numerous offspring that spread around widely.
«Dong Ding Mei Ren» or «Beauty from the Frost Peak» is made by the technology similar to «Dong Fang Mei Ren».
When dry, these are small, glossy, olive-green, brown and purple bundles with tiny cuttings. The fragrance is intense, spicy-floral. The infusion is transparent, with a white grapes hue.
The brewed tea has bright, polyphonic, spicy-floral flavor with notes of honey, sparkling wines, fruit candies, raspberry leaf and black currant. The aroma is exciting, honey-floral. The taste is juicy, silky, sweetish, with a light berry acidity and spicy nuances, transforming into lingering, refreshing aftertaste.
Brewing suggestions. Brew tea with hot boiling water (95°C) in a gaiwan or a teapot for Taiwanese oolong made of porous clay. The proportion is 6 g per 100 ml. The first infusion should last for 8-10 seconds. After that make short infusions (just for a second), increasing the infusion time gradually. You can repeat this brewing method up to 12 times.
